1 1/2 cups flour
1 1/2 teaspoons baking powder
1) Preheat oven to 400 degrees F. Grease a muffin tin small.
2) prick some holes in sweet potatoes and microwave until tender, about 10 minutes. Carefully scoop boiled potato from the skin, and transfer to a bowl. Add margarine and mix with an electric mixer until well combined. Turn into sugar and spices, and allow to cool for 10-15 minutes.
3) Mix flour and baking powder together in a small bowl. Add to potato mixture and mix well with a fork. Towards the end, you may have to work the dough by hand.
4) Fill each cup muffin tin with batter. Bake for 15-20 minutes, or until golden brown.
